In un piccolo angolo della Toscana, luogo di simbiosi perfetta fra uomo e natura, in mezzo alle colline pisane, nascono le idee ed i progetti del Caseificio Busti che continua a rinnovarsi a partire dall'anno della sua fondazione nel 1955. Nell'attuale e moderno sito produttivo di Acciaiolo vengono ideate le nuove ricette, frutto di un lavoro lungo e paziente, alla ricerca del perfetto equilibrio tra gusto, profumi e segreti di lavorazione, il tutto mantenendo invariati i tradizionali metodi di lavorazione artigianali, vero punto di forza dell’Azienda.


 
In a very small part of Tuscany, where a perfect symbiosis between man and nature stands, in the middle of Pisan hills, grow the ideas and projects of the Caseificio Busti that keeps on renewing itself since its foundation year in 1955, yet still keeping good tradition alive. In the current and modern dairy plant in Acciaiolo, new recipes come up after an hard and patient work, always searching the perfect balance between taste, perfumes and manufacturing secrets. Traditional artisanal working techniques remain unchanged, this is our real strength.

PECORINO TOSCANO DOP MIDDLE AGING

Pecorino DOP also has a tender form and benefits from a longer maturation time and again is produced with milks that conform to the Consortium of Tuscany Pecorino producers criteria. The compact form has an opaque white colour, slightly chalky and is most invitingly tasty. During the maturation process, the cheese receives a series of treatments with olive oil which colours the crust a mottled brown.
