Gelli Salumi S.p.A. has specialized in the production of quality seasoned cured meats. All are traditional Tuscan specialities such as the Finocchiona IGP, pork salami, wild-boar salami and sausages, seasoned Tuscan ham with D.O.P. certification (protected designation of origin) and all are strongly tied to the local farming traditions of this area.
Gelli Salumi S.p.A. has managed to understand these local traditions and develop them according to the most modern quality standards. The firm employs about 30 people and annually produces over 1500 tons of goods.
Gelli Salumi offers a wide range of products paying constant attention to artisan production methods and to high quality standards: food chain products, made with local pork meat, are available in order to satisfy all customers requests. The company began a steady and gradual expansion on main international markets since the ‘90s. We are currently on the European market in Germany, Holland, France, Poland, Denmark, England. Furthermore, our company is present in export list of Canada, Brazil and Hong Kong.
 
La Gelli Salumi S.p.A. è un’azienda specializzata nella produzione di salumi tipici toscani, quali la finocchiona IGP ed il salame di suino, le salsicce ed i salami di cinghiale, il prosciutto toscano D. O. P. e altri prodotti fortemente legati alla tradizione contadina di questa zona. La Gelli Salumi S.p.A. è stata in grado di recepire tale tradizione e di evolverla secondo i moderni standard di qualità. La Gelli Salumi S.p.A., che impiega circa 30 addetti e produce più di 1.500 tonnellate all’anno, offre una vasta gamma di prodotti ponendo sempre attenzione a mantenere un criterio di lavorazione artigianale e un alto livello qualitativo. Alcuni salumi vengono prodotti secondo il sistema di filiera corta, utilizzando carni di suini locali, in modo da soddisfare le richieste di clienti che sono molto sensibili a questo tipo di lavorazione. A partire dagli anni ’90 l’azienda ha iniziato un costante e graduale processo di espansione sui principali mercati internazionali.

Finocchiona IGP

The name of this salami comes from «finocchio», that means fennel, used to flavour pork meat. It is made from premium quality pork (Italian meat) with the addition of wild fennel seeds. Since 13 May 2015 it has been entered in the register of protected geographical indications (PGI) by the EU. Thanks to this registration, production regulations ensure a high-quality product to consumers. Finocchiona P.G.I. is prepared using Tuscan artisan curing processes, according to traditional recipe passed down for generations. The wild fennel combines perfectly with the lean pork during the curing process. Finocchiona P.G.I. has a soft texture, light red colour and it feels very soft in your mouth.

Prosciutto Toscano DOP

It comes from pigs raised in the following regions according to D.O.P. disciplinary code (Protected Designation of Origin producers' association rules): Lombardia, Emilia Romagna, Marche, Umbria, Lazio and Toscana. Roundish shape arched on top for the presence of a “fleshy frame” that does not protrude for more than 8 cm over the head of the femur. Weight normally around 8/9 kg but never less than 7.5 kg. Delicate and not too salty taste.
