The four olive groves of Triboli Farm are close to each other, at 250 meters above the sea. The Impruneta “terroir” is particularly good for Olive plantation. Indeed, the clay soil allows to mantain a good humidity during drought seasons, a good ventilation permits the Olive pollination, a mild climate support the plants survivor during summer and winter seasons. By organic and restorative farming technique we rise the the land fertility and the resilience of climate changes. In particular, we use bio fertilizer and home product compost with waste organic material from our Triboli Farm. After every harvest, we bury a mix of specially-made seeds, just after the blooming the seeds went cut and left in field to enrich the soil with organic substances. Finally, Triboli Farm’s chickens scratch about the Olive groves, naturally fertilize the soil and by feeding themselves from the olive’s larvas and flys. In mid-October, when the olive are just “invaiate” (its first maturity) the harvest begins using tools that advance the olive’s fall on the nets, stretched on the soil. Immediately after the olives are manually pick up, placed in boxes and carried in the olive-press. The production is made in the same day, the Mori-Tem olive press, with advance technology. The “cold-squeezing” techinique and the prompt pressing give a superior value taste. The extra-vergine Oilve Oil of Triboli Farm is immediately filtered and bottled in inoxidizable bottles, that allows a long quality preservation of the oil, by avoiding peroxide development. The blend obtained is an antioxidant, fat-acids, vitamins, enriched, and curative properties mix. It presents a fresh vegetable aroma of freshly cut grass with a pleasant bitter and spicy aroma.
