Pearl spelt (Triticum dicoccum) comes exclusively from our hills on our organic farm. Spelt is an ancient cereal and is a natural source of vitamins (vitamin A, thiamine B1, riboflavin B2 and niacin B3) and mineral salts (iron, phosphorus, potassium and magnesium), its consumption brings a high value of protein and fiber, as well as a limited contribution of fats and calories. Low in gluten naturally. It does not need to soak, it is cooked in 18 minutes to get tasty soups, fresh salads, meatballs and also excellent desserts. Limited availability.
The VAIANINO Organic Extra Virgin Olive Oil is produced entirely from our organic, Tuscan olive tree grove. No chemical treatments are used, but with the help of nature, the territory, the climate and our hard work we are able to obtain an optimal extraction from healthy olives. Vaianino Extra Vergin Olive oil is extracted cold to preserve its highest quality. The varieties of our Tuscan olives that leave an enjoyable fruity taste are Leccino, Frantoio, Moraiolo and Pendolino.
Spelt, used for the production of our flour, undergoes only one process, that of peeling, which consists in removing the outer casings from every single grain, while maintaining a good percentage of fiber and nutritional values, and the milling takes place then on the bare grain that retains so much of the nutritional characteristics at the origin. The whole Dicocco Spelt Flour is worked with stone millstones at low speeds to maintain the nutritional values of Dicocco Spelt and is excellent for all baked goods: jam tarts, biscuits, focaccia, bread and pizza.
